This technique was inspired by our time in Las Vegas in 2015, while preparing for a Gala Dinner following the USA Bocuse d’Or tryouts at The Palazzo. During the event, we had the chance to watch the intense competition that would determine the next Team USA.

Among the many talented participants, one team led by Chef Brian Lockwood stood out. As he prepared to plate his main course, he brought out a turntable—an unexpected tool that immediately caught everyone’s attention. With precision and creativity, he used it to achieve a beautifully executed presentation that left a lasting impression.

That same year, Mathew Peters won the tryouts, and two years later, in 2017, his team made history by earning Team USA’s first-ever Gold medal at the prestigious Bocuse d’Or.

Part 1:
Turntable Plating

Step 1

  1. Place your metal ring and grip pad securely on the turntable.

Step 2

  1. Position your plate on top of the grip pad, ensuring it is stable and centered.

Step 3

  1. Remove the record player needle, then turn the turntable on.
  2. While the plate is spinning, pipe your purée steadily in one spot to create a well. Avoid moving the piping bag.

Step 4

  1. Using the back of a spoon, gently press and guide the purée as it spins to form shape and texture.
  2. Continue until the desired visual effect is achieved.

Step 5

  1. Use this purée design as the focal point for plating your dish—arrange accompanying elements creatively around the spiral.
