Inspired by the Italian-American tradition of the Feast ofthe Seven Fishes, this dish blends classic scampi technique with brighter,globally influenced flavors. Lime and cilantro introduce a fresh contrast whilemaintaining the richness of the original preparation. Though often associatedwith holiday dining, this dish is well-suited for year-round cooking. Acombination of spaghetti and zucchini noodles keeps it balanced and versatile.

To lighten the meal, the scampi is served over a blend of spaghetti and zucchini noodles, which conveniently cook together in a single pot for a quick, 30-minute dish. Wild Fork’s sweet Argentine red shrimp add vivid color and deep flavor to this citrusy, buttery preparation. While lime and cilantro shine here, the dish lends itself to easy customization—try different herbs, swap pastas, or add extra heat with chili flakes, Aleppo pepper, or fresh jalapeño for a personalized twist on this holiday favorite.

Part 1:
Preparation

Step 1

Pat shrimp dry with paper towels. Spiralize or julienne the zucchini into noodles. Mince garlic, zest limes, and chop cilantro.

Part 2:
Pasta & Zucchini

Step 1

Bring a large pot of salted water to a boil. Add spaghetti and cook until al dente according to package instructions.

Step 2

Add zucchini noodles during the final 30 seconds of cooking.

Step 3

Reserve ½ cup pasta water, then drain.

Part 3:
Shrimp Scampi and Finish

Shrimp Scampi

Step 1

Heat olive oil in a large skillet over medium-high heat. Add shrimp and sear for 1–2 minutes per side until lightly browned but still undercooked in the center. Remove shrimp from the pan and set aside.

Step 2

Add garlic, red pepper flakes, and ½ tsp salt to the same pan. Cook for 1–2 minutes until fragrant.

Step 3

Add white wine and simmer for 3–4 minutes until reduced by half.

Step 4

Add butter, lime juice, lime zest, remaining 1 tsp salt, pepper, and ¼ cup reserved pasta water. Simmer for 1–2 minutes until emulsified.

Step 5

Return shrimp to the pan and cook for 1–2 minutes until fully cooked through.


Finish

Step 1

Add drained pasta, zucchini noodles, shrimp, and cilantro to the pan.

Step 2

Toss to combine, adding more reserved pasta water as needed to loosen the sauce.

Step 3

Taste and adjust seasoning with salt, pepper, or lime juice.

Step 4

Serve immediately, garnished with grated parmesan.


Notes

  • Argentine red shrimp are naturally sweet and enhance the flavor of the dish, but any large shrimp can be used
  • Finishing the shrimp in the sauce prevents overcooking and keeps them tender
  • Reserve pasta water to help emulsify and adjust the sauce consistenc

Tips

  • Do not over-sear the shrimp initially; they should finish cooking in the sauce
  • Salt pasta water well to properly season the dish
  • Toss pasta off heat to maintain a smooth, emulsified sauce
