
A recipe developed by one of our own chef assistants, Chef Daniel Uribe, this simple, delicious recipe requires ingredients you can easily find in your home kitchen. This was a winner at the 2018 Taste of The Master Chefs event—our friend Chef José Andrés was a big fan! Rubbed with an ingenious mix of spices, herbs, brown sugar and lime juice, this rotisserie chicken is packed with flavor and will be savored by every one of your guests (finger-licking optional). Enjoy!

Step 1
In a mixing bowl, combine the dry ingredients and whisk together until the mixture is homogenous. Add the lime juice and olive oil and whisk until mixture forms a liquid paste. Set mixture aside and truss the chicken.

Step 2
To truss the chicken: On a flat surface, place the chicken on its back with its legs facing toward you. Take a long piece of butcher's twine (about 4 to 5 times the length of the chicken) and fold it in half evenly. Slide the string underneath the drumsticks. Pull up the ends of the string and crisscross over the legs, then go under the ends of the legs. Crisscross the string over the legs again, pulling legs into the center. Pull string taut so the legs stay together during roasting.
Flip the chicken with the legs still toward you. Keep string taught.
Pull the string away from the legs and wrap it under the wings. Crisscross the string across the back of the chicken. Wrap string around the chicken, crossing over the wings. Flip chicken over so the legs are back on top but pointed away from you, and tie the string off across the breast, pulling taut.
Trim excess string, then tuck the wing tips under the chicken. Rub entire surface of chicken with the spice paste/rub.

Step 3
Place the trussed, rubbed chicken on the Arteflame rotisserie and place it in your favorite Arteflame grill (as shown in the picture) and begin to cook.

Step 4
Cook the chicken until the internal temperature has reached 165 degrees F. For safety, do not remove it before it reaches the required temperature. (Note: temperature in the picture is not ready to eat.)

Once chicken is fully cooked, serve as desired and enjoy!
