Plating

Step 1

Place white chocolate, gelatin (hydrated) and condensed milk in a plastic container.

Step 2

In a saucepan, create a syrup with water, sugar, and glucose. Stir until the sugar is dissolved and bring mixture to a boil. When mixture starts to boil, itwill form large bubbles and a white foam. Wait until the foam disappears and the mixture looks clear, then remove pot from heat.

Step 3

After removing pot from heat, wait ten seconds, then pour syrup into the container containing the white chocolate, gelatin and condensed milk.

Step 4

Blend with an immersion blender until you have a smooth mixture.

Step 5

While the mixture is still warm, add the food coloring so it can be easily mixed and dissolve properly. Continue blending until you have mixed the food coloring completely. If you haven’t reached your desired color, you can add more food coloring as needed.

Once you achieve your desired color, your mirror glazes are ready to be used.

Suggestion: Use the mirror glazes while they are warm or at room temperature; stir glazes before plating. (See picture for some seriously inspired artistic plating!)
