
We specially developed this recipe to celebrate the pistachio in a smooth, creamy spread that can be enjoyed by the spoonful like peanut butter (albeit, an expensive one).

Step 1
Pour the water into the container of a Vitamix blender. Starting on the slowest speed, turn on the Vitamix and add the xanthan gum slowly while increasing the speed until you reach the maximum speed. Blend until you have a smooth, homogenous mix.

Step 2
Place the prehydrated xanthan gum into a container deep enough to be vacuumed. Place the container into the vacuum machine to remove any air bubbles that were created from the initial blend. Start the vacuum process until all the air has been removed from the mix. Keep a close eye during the process to ensure the mixture does not spill over your machine.

Step 3
Once the air bubbles are removed, pass the prehydrated xanthan gum through a fine mesh strainer and then into a vacuum bag. Seal and reserve until needed.

Begin by preparing your mise en place.

Step 2
Place all ingredients in the container of a large Vitamix blender. Starting on low speed, blend until fully incorporated and smooth while slightly increasing the speed to medium-high.

Step 3
With the help of a spatula, pass the pistachio butter through a fine mesh strainer to remove any clumps.

Step 4
Plate as desired. Store any unused pistachio butter in deli containers and refrigerate.
