Colorful, complex, and lemony, this Mediterranean sheet pan meal comes together in minutes and is packed with nutritious ingredients. The chicken thighs stay juicy with a crisp skin on top, while the zucchini, peppers, onions, and tomatoes get browned, intensifying their natural sweetness. Top this bake with rounds of sliced lemon; as they roast, the lemons transform into caramelized pops of flavor. This is a dish that can easily get folded into your weekly dinner rotation, and is ideal for meal prep.

Part 1:
Chicken Thighs

Step 1

Preheat the oven to 425°F.


Step 2

Season the chicken thighs with salt and pepper.


Step 3

In a liquid measuring cup or small bowl, combine the olive oil, lemon juice, Italian seasoning, ½ tsp kosher salt, and some freshly ground black pepper.


Step 4

Transfer the chicken thighs to a bowl and pour half of the olive oil mixture over the chicken, make sure each piece is well coated –reserve the remaining half of the mixture for the vegetables. Let the chicken marinate for 10-15 minutes as you prepare the remaining ingredients.

Part 2:
Preparing the Vegetables

Step 5

Prepare the vegetables: Slice the zucchini into rounds or half moons, about 1½ -2” thick. Slice the peppers into 1½-2” thick strips,discard any seeds. Cut the onion into large 1½ -2” thick wedges.


Step 6

Toss the cut vegetables and the cherry tomatoes in the remaining olive oil mixture, then spread them out evenly onto a sheet pan.


Step 7

Arrange the chicken thighs evenly on top of the vegetables.


Step 8

Slice the lemon into thin rounds, about ¼” thick; make sure to discard any seeds so as to avoid bitterness when roasting. Scatter the lemon rounds on the sheet pan; do not top the chicken itself with the lemon rounds, as that will prevent browning.


Step 9

Roast for 30 minutes in the preheated oven.


Step 10

Scatter the marinated olives around the sheet pan, then place it back in the oven and let the chicken and vegetables finish roasting for another 10-15 minutes, or until the chicken is golden brown and has an internal temperature of 165°F.


Step 11

If using feta, top the chicken and vegetables with the cubed cheese, and you’re ready to serve!
