Commonly featured in chai tea and used throughout Indian, Middle Eastern, and Nordic cuisines, it offers both sweetness and depth. This cardamom soil celebrates the spice’s unique character, blending it with ground coffee, cocoa, and a hint of sea salt to create a crunchy, fragrant topping. Use it to add texture and contrast to rich, creamy desserts, or sprinkle it over your favorite sweets for a beautifully balanced finish.

Part 1:
Cardamom Soil

Step 1

Preheat oven to 300 degrees F (148 C). Mix the dry ingredients and the warm butter with a wire whisk, slowly incorporating until the soil comes together in the form of a coarse meal.


Step 2

Next, spread the soil in an even layer on a cookie sheet or sheet tray lined with parchment.


Step 3

Bake for about 15–20 minutes until dry and the crumble tastes cooked.


Step 4

To use, let the soil cool and pass through a fine strainer or tamis to achieve desired consistency.
