The infusion process allows the apples to take on the bright citrus, herbal, and rum notes of the mojito, creating a delicately flavored, aromatic bite. Beautiful on their own or as an accent to a larger dish, they’re a spirited way to showcase creativity and balance in modern cuisine.

Step 1
Prepare your mise en place.

In a liquid measuring cup or jar, stir the lime juice and sugar together until the sugar dissolves.

Add half of the crushed ice, then tear mint leaves in half and add to the glass.

Step 4
Gently stir for 15 seconds, then add the rum and the remaining crushed ice.
Gently stir for 5 seconds, then let rest for 2 minutes.

Step 5
Strain the drink with a fine-mesh strainer and reserve the liquid.

Step 1
Wash and dry the apple to remove any pesticides and/or wax.
Core the apple and cut in half lengthwise.

Step 2
Using a sharp knife, slice the apple into very thin slices.

Step 3
Place the apple slices inside a vacuum bag and add the mojito drink. Vacuum the bag to compress the liquid into the sliced apples.

Step 4
Plate as desired.
