Selecting the right ribs is essential for achieving optimal tenderness and flavor. Extra-tender Farmland ribs are processed in a water, salt, and phosphate solution that helps retain moisture—but proper handling is key.

Because these ribs continue to brine while sitting in their solution, it’s important to choose packages that have been freshly stocked in the case. Avoid racks that feel overly soft or limp, as this may indicate they have been thawed too long. For best results, keep the ribs frozen until needed rather than allowing them to remain in the saline solution for extended periods. Proper selection and storage ensure the ribs maintain ideal texture and quality before cooking.

Part 1:
To Season the Ribs

Step 1

1. Season the ribs with the Smokin' Gun medium coverage. Next, apply medium to heavy coverage the John Henry Honey Rib Rub.
2. Apply the Simply Marvelous Spicy Apple rub in a light coat

Part 2:
To Smoke the Ribs

Step 1

1. Set the drum smoker up to cook ribs using the rib bar insert. Use 2 lumps of hickory wood and a full basket of charcoal. Set the temp to about 275°F with the ribs hanging over the fire.

2. Cook at 275°F for one hour and 45 minutes to 2 hours.

Part 3:
To Wrap and to Finish the Ribs

To Wrap the Ribs

Step 1

Remove the ribs from the drum smoker using the rib handling hooks. Lay the ribs on a sheet of foil and proceed to apply the wrap mixture.


Step 2

Apply the coconut sugar to the top of the ribs. Add a stick of salted butter split lengthwise on top of the coconut sugar. Pour the Tennessee Red Sauce over the butter. Add the Mt Dew to moisten the ribs.


Step 3

Add a second layer of foil and wrap the ribs tightly. Add the cooking grate in place of the rib hanging insert and cook for about another 1 hour to 1 ½ hours until tender.


To Finish the Ribs

Step 1

Season with equal part Smokin' Guns and Sweet Money.Next, add 1/2 sweet apple to a powder and dust.


Step 2

1. Put ribs on the grill in the smoker.

2. Dust/Brush/Dust.
