The siphon pot transforms a traditional brewing tool into a creative method for cooking. In this preparation, aromatic vegetables and herbs are infused directly into a rich broth, producing a flavorful consommé-style soup. The dramatic brewing process, normally reserved for coffee, creates both an elegant tableside presentation and a deeply layered flavor. Step 1
Remove the upper chamber from the lower pot of the siphon. Lightly pull the chain to release the hook from the felt filter.
Step 2
Remove the felt from the filter (not needed for broth).Place the filter base back in the upper chamber, securing it with the chain.
Step 3
Add vegetables and herbs of your choice to the upper chamber.
Step 4
Using a funnel, pour broth, consommé, or stock into the bottom chamber.
Step 5
Reattach the upper chamber securely to the bottom chamber.
Step 6
Place burner under the bottom chamber (alcohol or butane).For butane, fill, ignite, and adjust flame.
Step 7
As broth heats, it will rise into the upper chamber, steep with aromatics, then drop back into the bottom chamber. This cycle will repeat once more.
Step 8
Once the second cycle completes, turn off the burner.
Step 9
Carefully remove the upper chamber (note: it will be very hot).
Step 10
Pour infused broth over your prepared dish and serve immediately.
