This plating technique is inspired from our time in Las Vegas in 2015, when we were working to prep for our Gala Dinner after the USA Bocuse dâOr tryouts at the Palazzo.
While we were working, we also got the opportunity to watch the extremely hard competition that was going to reveal the next Team USA. While we were walking around the participants and observing how talented each one was, one of the teams led by Chef Brian Lockwood took all our attention. As he was getting ready to plate his main course, he opened one of his boxes and took out a turntable. Everyone started to wonder what it was for until he used it to plate his main course so perfectly executed. The competition was getting better and better!

Step 1
Place your metal ring and grip pad on your turntable.

Step 2
Place your plate on top of your grip pad, making sure it is secure.

Step 3
Take off the record player needle and turn on. While it is spinning, pipe your purée without moving the bag, creating a well.

Step 4
With the back of a spoon, gently press on the purée while it is spinning to create shape and texture.

Step 5
Get creative to plate your dish around this plating technique and make it your own.
