If you own a vacuum sealer, this is a quick and easy way to blanch your vegetables. By using compression, this technique can help you achieve more vibrant colors in your fruits and vegetables.

Step by Step Guide

Step 1

In a small bowl, cover your vegetables in ice water.


Step 2

Set bowl at the bottom of your vacuum sealer.


Step 3

Set your vacuum to 100%. Close the lid and let the vacuum initiate.


Step 4

You will see a ripple across the water as it compresses the leaves, making them a more vibrant green. You may need to repeat 2 to 3 times, depending on how powerful your vacuum is set.
