Step 1
Take the upper chamber pot off the lower pot of the siphon and lightly pull on the chain; this will release the hook to the felt filter.

Step 2
Since the filter will not be used for coffee, remove the felt from the filter and drop back into place in the upper chamber pot, lightly pulling on the chain to secure the filter in place.

Step 3
You may begin to add vegetables and herbs of choice to infuse the broth. Some suggestions for infusions are: dehydrated carrot, celery, garlic, leeks, bay leaves, thyme, rosemary, scallions and sage.

Step 4
With a funnel, pour your broth, consomme, or stock into the bottom chamber pot.

Step 5
Secure the upper chamber pot back on the bottom chamber pot.

Step 6
If you decide to heat your burner, there are two options for burners: an alcohol burner or a butane burner that you can buy separately. If you are using a butane burner, fill with butane, turn the gas on and light it. Place your burner of choice under the bottom pot to heat the broth. As the broth heats, it will vacuum to the upper chamber pot, infuse like a tea, and then drop to the bottom chamber pot.

Step 7
The cycle will happen once more. Turn your burner off once the second cycle has completed.

Step 8
Remove the upper chamber pot from the base.
Note: The siphon pot will be very hot.

Step 9
Pour your infused broth over your desired dish.
