One of Chef Rosendale’s most acclaimed virtues is how easily he can come up with so many simple but beautiful ideas, like transforming a simple potato salad into a punchy one-bite dish. With a few clever tools, creative potato slicing and the addition of vivid, flavorful microgreens, our chef has come up with an entirely new, innovative way to present and elevate a traditional dish—introducing the potato nest!

Part 1:
Potato Nest

Step 1

Wash potato thoroughly, scrubbing with a vegetable brush to remove any dirt.

Using a peeler, peel the potato completely.


Step 2

Using a paring knife, remove the "eyes" of the potato.


Step 3

Cut off the top and bottom of the potato.


Step 4

Make sure the potato is completely clean and both sides are cut straight in order to place in the spiralizer easily.


Step 5

Carefully place the potato between the arm and the blade of the spiralizer.


Step 6

Push the arm and blade together until you feel it is firm enough to start operating.


Step 7

Start shaving the potato by rolling the spiralizer arm and pushing through the wall so the blade cuts the potato into spirals.


Step 8

Place the spirals of potato into cold water and rinse only once.


Step 9

Place the spirals of potato on a paper towel and allow to dry.


Step 10

Make a few nests of potato, ensuring they are similar in size.


Step 11

Place the nests inside of the tea steepers.


Step 12

Make sure you lock each one of the tea steepers prior to frying.


Step 13

Add oil to a pan over the Control Freak induction cooking system.


Step 14

Set the thermometer to 350 degrees F and start heating the oil.

When the oil reaches temperature, start frying.


Step 15

Place one (or as many as will fit in the pan) tea steeper filled with potato spirals. Fry for 1–2 minutes, ensuring they do not burn. Keep in mind the tea steeper is made out of steel; when you remove the tea steeper from the oil, it will continue browning the potato because of the heat that the tea steeper carries itself.

When tea steeper has cooled enough to touch, remove potato spiral and place on paper towels to drain the excess oil.

Reserve until needed.


Step 16

Plate as desired—add some mixed salt, paprika and garnish with microgreens.
