Part 1:
Compound Fennel Pollen Butter

Step 1

Let the butter sit out at room temperature until it soft ens up.


Step 2

Combine all the ingredients in a Robot Coupe bowl fitted with the blade attachment.


Step 3

Blend butter until everything is well combined.


Step 4

Place 200 grams of the fennel pollen butter on a sheet of plastic wrap and roll to form a tight log. Repeat with remaining butter, forming into logs with plastic wrap.


Step 5

Allow to firm in the fridge.


Step 6

Cut as desired.
